My particular favourite was the The Permit Room Clover Club – a refined and playful take on a classic cocktail, blending the smoothness of Bombay Sapphire gin with the tartness of raspberry syrup and fresh lemon juice. Finished with a frothy egg white layer, this drink is both visually appealing and deliciously balanced.
