Migas – Closet Cooking

Mexican style scrambled eggs with crunchy tortilla chips!
Migas are a Mexican style of scrambled eggs with crunchy tortillas mixed in; a super simple and tasty breakfast! This recipe starts out with onions, jalapeno and tomatoes which are cooked in a pan before adding the eggs and cheese and cooking scrambled style. When the eggs are about half way cooked, the tortilla chips are added, so that they soften a little in the remaining moisture in the eggs as they finish cooking, without getting soggy. Although it’s not traditional, I like to add cottage cheese to the eggs before cooking them. Once the migas are cooked you can serve them with your favorite Mexican style toppings! (I like salsa verde (link) and queso fresco on them!)
