Easy Crescent Roll Taco Bake

Mexican casseroles are one of our favorite weeknight meals. This recipe uses crescent rolls and Velveeta cheese – YUM! It was super easy to make and tasted fantastic. I especially loved all the ooey-gooey cheese. Whether you top it with salsa, sour cream, or a little extra cheese, this dish is pure comfort food that’s guaranteed to disappear fast!

How to Make Taco Crescent Bake

As I said, this is super easy to make. In a large skillet, cook ground beef over medium heat until no longer pink. Drain excess grease. Return the meat to the skillet, and add taco seasoning and Rotel tomatoes. Stir well and simmer for 5 minutes.

Lightly spray a 9×13 pan with cooking spray. Press one can of crescent rolls in the bottom of the pan—spoon ground beef over the dough in an even layer. Slice the Velveeta cheese and lay on top of the taco meat. Top with the remaining can of crescent rolls and bake in a preheated oven until the crust is golden brown. Sprinkle with fresh cilantro and green onions.

  • Feel free to substitute ground turkey or ground chicken for lower calories.
  • I use crescent dough sheets in this recipe. If you are using cans of crescent roll dough, make sure to seal all of the perforations.
  • Is Taco Crescent Bake spicy? We did not think this was spicy. If you are worried about the heat, make sure to use MILD Rotel diced tomatoes and green chiles.
  • Variations/Additions:

This casserole has quickly become a favorite at our house. It is our go-to recipe for Taco Tuesday! Crescent roll taco bake is a hearty, cheesy dish that pairs perfectly with a variety of sides. 

  • A crisp lettuce and tomato salad with a zesty dressing adds a fresh contrast to the warm, savory flavors. 
  • Mexican rice or cilantro lime rice makes a great side to round out the meal, while black beans or refried beans bring even more flavor to the table. 
  • For something crunchy, serve it with tortilla chips and salsa, guacamole, or queso
  • And don’t forget a dollop of sour cream or extra salsa on the side to top off each slice!
