Easy Crescent Roll Taco Bake
Mexican casseroles are one of our favorite weeknight meals. This recipe uses crescent rolls and Velveeta cheese – YUM! It was super easy to make and tasted fantastic. I especially loved all the ooey-gooey cheese. Whether you top it with salsa, sour cream, or a little extra cheese, this dish is pure comfort food that’s guaranteed to disappear fast!
How to Make Taco Crescent Bake
As I said, this is super easy to make. In a large skillet, cook ground beef over medium heat until no longer pink. Drain excess grease. Return the meat to the skillet, and add taco seasoning and Rotel tomatoes. Stir well and simmer for 5 minutes.
Lightly spray a 9×13 pan with cooking spray. Press one can of crescent rolls in the bottom of the pan—spoon ground beef over the dough in an even layer. Slice the Velveeta cheese and lay on top of the taco meat. Top with the remaining can of crescent rolls and bake in a preheated oven until the crust is golden brown. Sprinkle with fresh cilantro and green onions.

Preheat oven to 375ºF.
In a large skillet, brown the ground beef and drain the fat. Return meat to skillet, add taco seasoning and Rotel tomatoes. Mix well and simmer for 5 minutes.
